Seaside Country Store starts every pint of its famous house- mixed spread with a base of Cabot Vermont Cheddar Cheese. One might argue the merits of Cabot Vermont Cheddar vs. Kerrygold Irish Cheddar, but Cabot’s is without a doubt the best, or the second best, cheddar in the world. Flavors include horseradish, port wine, old bay, southwest fiesta, and Swiss almond. Seaside’s cheese-spread sommelier — or cheese-spread steward, as he is known locally — tells us that the runaway favorite flavor is horseradish, followed closely by port wine.
